This just might be my new fav cookie recipe. They are filled. with so many delicious and nutritious ingredients (flaxseeds, oats, nuts, seeds, dried fruit, dark chocolate!) and they taste amazing. They are sure to please all of the vegan and non-vegan eaters in your home!

Vegan Cowgirl Cookies

INGREDIENTS

  • 1 tablespoon ground flaxseeds

  • 3 tablespoons water

  • 1/2 cup coconut oil (or vegan butter)

  • 1/2 cup granulated sugar

  • 1/2 cup packed brown sugar

  • 1 teaspoon vanilla extract

  • 1 cup all purpose flour

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon baking powder

  • 1/4 teaspoon kosher salt

  • 3/4 cup old fashioned oats

  • 1/3 cup rice krispies cereal

  • 1/2 cup chocolate chips

  • 1/3 cup chopped walnuts, pecans, pepitas, sunflower seeds, dried cherries, etc (I like to use a combo of whatever I have in the house!

  • 1/3 cup shredded coconut

DIRECTIONS

Preheat the oven to 375F.

In a small bowl, mix together the ground flaxseeds and water. Allow to sit 5 minutes. 

In the bowl of a stand mixer, or with a handheld mixer, (or even in a bowl with a strong spoon!) cream together the coconut oil and sugars. 

Add the flaxseed/water and vanilla, and mix to combine well. 

Add in the baking soda, baking powder and salt and mix well. Ass in the flour and mix until just combined. 

Mix in the oats, rice krispies, chocolate chips, nuts, and coconut until well combined.

Using an ice cream scoop or 2 tablespoon scoop, place the dough onto a parchment lined baking sheet and bake 10-12 minutes, until lightly golden and set.
